Delicious gourmet mushrooms made from old coffee grounds - impossible? Think again. Back to the Roots produce local, fresh mushrooms from what was formerly urban waste. In 2012, the social enterprise diverted and reused 3.6 lb of coffee grounds from the well known chain Peet’s Coffee & Tea, turning them into gourmet oyster mushrooms.
Back to the Roots also sells grow-at-home mushroom kits that produce up to 1 ½ lbs of mushrooms in 10 days.
Besides growing quality fungi, the company gives back in many ways: creating community gardens, providing locals with jobs as well as their 1-for-1 Facebook campaign wherein in exchange for posting a pic of your fully grown mushroom kit, Back to the Roots will donate a kit and sustainability curriculum to an elementary classroom of your choice. True to their mission to promote a sustainable lifestyle, for each mushroom kit purchased at Whole Foods, Back to the Roots donates $1 to the Whole Kids Foundation to encourage a healthy and active lifestyle amongst kids.
